Sacred Sourdough
With Britta Koenen
April 5 - 7, 2024
The Sacred Sourdough workshop is created by a learner, for learners – together we will dive deep into the process of making fresh sourdough bread from scratch. As we walk through each step, we’ll explore some basic sourdough science, build our intuition in working with bread dough, and contemplate the meditative and embodied aspects of making and breaking bread. Our class is a space to ask all sorts of questions, to make mistakes, and to fully explore this long-held human tradition. Whether you are a total bread beginner or an experienced baker, you are welcome here!
We will be making the Basic Country Loaf recipe from Tartine by Chad Robertson. The course will have three movements over the course of the weekend: feeding the starter on Friday night, making and baking loaves on Saturday, and tasting and reflecting on our work on Sunday morning. We’ll be beholden to the schedule of the bread on Saturday, but you can expect approximately six hours of active class time. The Guild will provide all materials necessary for a weekend of bread immersion. From this course, you will take home sourdough starter, your very own handcrafted loaf, written materials summarizing recipe and process notes, and (hopefully) a newly inspired or reinvigorated love of bread baking.
No prior bread baking experience is necessary to enroll in this class – just passion and curiosity to learn! Participants should be able to knead dough with light to moderate vigor, and be able to consume gluten.
